Special K Bars

Today was our Team Meeting/Creative Day.  And whenever we have our extended Creative Day we always do a potluck.  So today I brought Special K Bars.  My college roommate and I used to make these and honestly, I can’t recall the last time I made them so I was pretty excited to make them and share them with friends!  It brought back some great memories making these again.

They were a HUGE hit.  So in case you are interested in making them yourself and trying them out, here is the recipe…

  • 1 C. sugar
  • 1-1/4 C. corn syrup
Mix these items together in a saucepan and bring to a boil.  Remove from heat and add:
  • 1 C. peanut butter
  • 1 t. vanilla
Stir in 6 C. Special K cereal until well coated.  Then place in a greased 9 x 13 pan.  (note: using wax paper to press the mixture into the pan helps)
In a microwave safe bowl, melt the following:
  • 1 C. semi-sweet chocolate chips
  • 1 C. butterscotch chips
Melt for 30 seconds, stir and repeat until smooth. Then spread on top of bars and let cool.
