Saturday’s Crazy for Cards Event was so super fun and as always requests for recipes were made! As luck would have it, I was asked to make a lemon dessert (since I have a lemon tree.) But I will be completely honest…this is NOT my area of expertise. Everyone said I should make Lemon Bars. But that didn’t feel right. I always am more adventuresome with my baking than I am with my cooking, so lemon bars weren’t going to cut it!
I did some Google searches as well as checked out Pinterest. I found a handful of recipes that were intriguing. I decided to go with one and tweak it a bit. So without further ado, here is the recipe for my Gooey Lemon White Chocolate Bars…
- 2 Lemon Cake mixes
- 1 small package lemon pudding
- 1 C. butter, melted
- 2 eggs
- 1 C. sugar
- 1/2 C. milk
- 2 t. lemon juice
- 2 C. white chocolate chips
- 1 can condensed milk
- powdered sugar for dusting
First, preheat your oven to 350 degrees and line a 9×13 pan with parchment paper and spray it to prevent sticking.
Next, combine the cake mixes, pudding mix, melted butter, eggs, sugar, milk & lemon juice. Batter will be rather thick.
Add about 2/3 of the batter to the pan and spread evenly.
Layer the white chocolate chips evenly over the batter.
Then pour the condensed milk in an even layer on top.
Finish by adding remaining batter to the top. I added it by spoonfuls and then sort of “mushed” the mounds of batter together to create a thin layer.
Bake for 30-40 minutes. It will appear gooey when you remove it from the oven, but will set more as it cools. Sprinkle with powdered sugar and cut into small squares (it’s quite decadent!) and store in an airtight container.
